Foxy Falafel Food Truck - Stoplight Platter

Today I was able to be in Downtown Minneapolis around 11am, which is when most of the food trucks open for business. 
I was SUPER excited to come across Foxy Falafel, which I have been meaning to try for a long time.  (They just opened a brick & mortar restaurant last year, too!)

I tried the Stoplight Flafel Platter: 2 pieces of the curry, beet, and regular falafel (6 total); cabbage. cucumber, tomato, hummus, served with pita or corn chips.  I added some of Foxy's homemade pickles and some hot sauce.  It was delicious!

Med. Breakfast: Hummus, Tabouli, Pita Chips



An unusual breakfast, sure. It is still delicious, any time of day. Pita Chips served with hummus and tabouli for dipping. Hummus is Sabra Brand with Pine Nuts. I like Sabra in any place I cannot find Holy Land.

I ate my breakfast with a mini-V8 (low sodium) and water.

Wedding Food: MGM Grand in Las Vegas

March? Really? It's been 7-8 months since the last update? Whoa.

Well, The Saucy Coconut has been quite busy, as this post will prove. Yes, there was a wedding, and the reception was catered by MGM Grand Las Vegas in the Skylofts. I married Mr. Coconut in July, and the ceremony was great. Most importantly to this blog, there was great food. We had a chips and salsa station which also doubled as a taco station, a "build your own pita/falafel" station, lots of fruit and vegetables and some of the TASTIEST vegan cake EVER.

Next: Vegetable "trays". If you're a vegetarian, chances are you've ended up at more than one buffet where there are only vegetable or fruit trays to choose from. While my wedding did have vegetables, I LOVED the way they were presented, such as the fruit kabobs above or the standing holders of vegetables below.

While in Las Vegas, we also visited Yellowtail inside Belaggio and Chin Chin inside NYNY. Next post I'll feature the food had on the honeymoon in Kauai, Hawaii.

Holy Land Vegetable Pie with Artichoke and Garlic Hummus



Here is a vegetable pie from Holy Land, the oft-mentioned local manufacturers of excellent Middle Eastern foods.

This time around, I bought a vegetable pie from an open chiller in a market, and picked up some artichoke and garlic hummus to dip the pie in. The "pie" is sort of like a huge samosa: potatoes, peas, and other veggies surrounded by a pastry/bread crust. Of course, as with everything from Holy Land, it is not nearly as good as when it is made fresh from the store, but it's still a wonderful snack.

Falafel with Hummus from Holy Land



Yummy. Holy Land is an awesome local Middle Eastern restaurant, store and buffet supplied with fresh pitas, hummus, tahini, falafel, and everything else yummy under the sun. This was a box of leftovers I was able to take home after a work banquet. Filled with falafel balls and hummus, I also got some tahini and tabouli and purchased some pitas at the store. Seriously: day old pitas go 30 for $4 and fresh are 10 $2.

So so so SO tasty. Holy Land Brand is sold at most grocery stores here, but it's more expensive than at the store directly.

Appetizers: Mediterranean Plate



Here is a cute little appetizer layout I did the other day. On the plate: stuffed grape leaves, pita triangles I toasted, sliced tomatoes, sliced cucumbers. In the mini bowls: olive tapenade and hummus.

The stuffed grape leaves, untoasted pitas, hummus and olive tapenade are from Holy Land Bakery in Minneapolis. Actually, they were from one of the many local grocery stores where Holy Land sells their wares.

EDIT:Actually, the stuffed grape leaves were from a can. I forgot about it, haha. They are really tasty but I forgot what brand. They are also fairly cheap for the anount you get. A couple bucks for at least twelve or more.

I altered the hummus a lot because it was rather soupy. Since Holy Land makes fresh hummus, every now and then there will be a not so good batch. I took the tub of hummus, added one can of garbanzo beans, a little garlic, some cumin, some red pepper flakes, and olive oil. I blended it all in the Magic Bullet and wound up with some excellent thick hummus.

I toasted the pitas in the toaster oven, then sliced into triangles.
