Food Trucks! Hola Arepa & Red Smoker



This is probably the last time of the season I will be able to get an arepa from Hola Arepa. This time, I got guac on the side, and added some hot sauce.

I also hit up the Red Smoker BBQ food truck and got some vegetarian chili with no dairy. It was made with kidney or pinto beans, and topped with green peppers, onion, cilantro, and cucumbers. Not too bad, I added hot sauce, because I always add hot sauce.

DDOW - Spicy Chile Verde w. Beans - Vegan Mofo 2013




As promised, here is the Spicy Chile Verde with Beans from this weeks Delivered Dish of the Week order. From the website:

“Spicy Chile Verde with Beans (V, GF, soy-free, no added sugar) An opportunity to see why chef Crescent Dragonwagon in her book Bean for Bean insists there is no substitute for Santa Fe Green Chilies from New Mexico. With green bell peppers.”

This had a ton of vegetables, as you can see. It actually had quite a bit of broth, too, but for the sake of the photo, I emphasized the veggies and beans.
I enjoyed this dish – it was a satisfying lunch that I will have more of tomorrow. I added a little bit of spinach because I add greens to as many things as possible if I have them around, and adding them to soups is one of my favorite ways to incorporate greens easily.

It was not quite what I expected – but then again, most of the dishes I have received so far are different than what I expected – and that is great. I love the semi-unexpected surprise of trying new foods or foods prepared in different ways than I would. It has been really invigorating and inspiring for my own cooking.

Next week for DDOW, I will be getting (and blogging) a container of Zucchini Linguine with Raw Tomato Sauce as well as a container of Heirloom Bean & Veg Cassoulet with Rosemary. Sounds great!!!!

Baked Tofu with Spicy Green Beans, Broccoli, and Rice Noodles



This was an experimental tofu marinade made of rice vinegar, soy sauce, veggie stock, ginger, garlic, agave nectar, chili sauce, sesame oil and peanut oil (only a TINY bit because those are REALLY strong flavored oils).

I marinated the tofu in pieces for about an hour, then baked for quite some time (45 minutes?). I made the mistake of first baking in a glass dish, which does not get that nice texture that a sheet pan or metal pan gives. So I transferred to foil and a metal sheet pan until I was too impatient to wait longer.

While the tofu was baking, I made one of my favorite snacks ever: spicy green beans. Just sauté garlic and ginger with fresh haricot verts (the long skinny green beans). Make sure you take the tops off. It's easiest to take big bunches and just chop off both ends. I also split many of them in half for easier eating. Anyway, as you have the garlic and the ginger and beans going (in just the smallest amount of oil or just cooking spray) pour in chili sauce (like what I call "Chunky Sriracha") and soy sauce. Coat the beans with this mixture, and you're done! I like to keep the beans really crispy and just slightly cooked. Place in a bowl and eat with hands or chopsticks (or forks). Great appetizer, really healthy.

As a complete side note, I am quite picky about soy sauce. You should NEVER be using stuff like La Choy. Kikkoman is decent, but I highly recommend you get into shoyus. I've been in love with Organic Shoyu from San-J for years.

Also in this dish: rice noodles and steamed broccoli.

Helen's Kitchen Chili with Tortilla Chips and Vitamin Water



This is a picture of the box of Helen's Kitchen, a company which has vegetarian and vegan frozen products such as chili, curries, etc.

I have pics of the chili, but they don't look that great, so I decided not to post them. It wasn't too bad, the tofu bits were an interesting addition to the chili. I ate the chili by dipping Garden of Eatin Red Hot Blues Chips into it.

I also enjoyed a Vitamin Water with my meal.
