Pho Noodle Soup with Tofu

Ack! This week completely escaped me for food blogging!

Hopefully this week I will be more consistent.

This week also marks VegFest Minneapolis 2013! It is coming up already! I will be volunteering at the festival, so come check it out!!!! Lots of fun and food!

OK. So the photo above is a quick soup I threw together. Again, I got major help from the Pacific Vegetarian Pho Soup Base that I added to thinly sliced garlic and onions. I threw in vermicelli rice noodles, then removed from heat and stirred in some "power greens" which was a mix of spinach, baby kale and baby red chard (mainly spinach).

For the tofu: I grilled them on the George Foreman Grill for a bit, then slathered on some quick cilantro-ginger-hot pepper sauce, cut into mini triangles and set on top of the soup.

What can I say? The temperature is dropping here and soup is comforting and fairly easy to make.

CSA Green Machine Bowl [Vegan Mofo]

Day Eleven of Vegan Month of Food!!! The green theme continues this week with another bowl of delicious vegetables from my CSA. This bowl includes sugar peas, garlic scapes and some greens. GREEN! Not the best photo, but it's Thursday and I am exhausted.

Lots more green to come!

Lemon-Dill Dressing: on Pan-Fried Tofu and a CSA Salad [Vegan Mofo]

Happy Vegan MoFo Day 4!

So many great ideas on the giant 2012 blogroll of MoFo-ers! It's fantastic to read through what others are doing this fun-filled month.

So I made this dish a while back, when I was up to my ears in dill and did not know what to do with it all! After a Google search of something along the lines of "what do I do with all this dill!?" I came across a few interesting recipes and stumbled upon this Lemon-Dill Tofu from Oh She Glows.

I had everything except the tahini, but it still turned out great and was a fantastic addition to some pan-fried tofu triangles.

My sides for this meal include some homemade simple cabbage and carrot coleslaw with a light vinegar/oil dressing and some steamed broccoli with sesame seeds. The coleslaw and dill were from the CSA. The broccoli was frozen.

I loved the dill dressing! I used it on a salad made from greens, carrots and tomatoes from the csa and topped with some flax seeds. Delicious!

Stuffed Manicotti Dinner

Mr. Coconut and I cooked a tasty Italian-style dinner for Mr. Coconut's Grandparents. We decided to make one of our favorite meals, Stuffed Manicotti, which I've blogged about before.

I made some focaccia-style bread and some bruschetta mix to go with it. We made some sauce from a combination of some canned whole peeled tomatoes, onion, garlic, olive oil, oregano, tomato paste, and basil. The star of the show, though, is the pesto tofu ricotta. A blend of basil, garlic, olive oil and walnuts for pesto; mixed with extra firm tofu. We stuffed that into cooked manicotti and then spooned sauce over the top and baked it to heat through everything.

We served the meal with a salad of greens, onions, snap peas, and pepitas (pumpkin seeds toasted and salted).

A Close-up of the meal:

Birthday 2010: Recap

My birthday was months ago, but here is a short recap on some of my fooding adventures on my holiday. First up, as pictured above, a piece of Chocolate Cake from My Local Co-Op, Mississippi Market. I really like picking up a couple pieces of this cake, that they always have available. It's delicious and simple and awesome with a glass of soymilk or almond milk.

Next up, Punch Pizza. It's my new favorite local pizza joint. Cheap, delicious food that is easily vegan and brings quality ingredients to the forefront. Plus, AMAZING freebies throughout the year via social networks. One of the smartest restaurants I've ever seen utilize Facebook, Twitter and a blog. First, the Punch Salad:

Mixed greens, pine nuts, balsamic vinegar. I believe the actual Punch Salad comes with prosciutto and cheese but vegan without those two. Focaccia comes with the salad and is also vegan.

Next, one of the "basic" pizzas, a margherita (crust, sauce, basil) with the dipping sauces of olive oil and balsamic vinegar for the crusts:

Truly awesome pizza with a truly smart company. These folks should be the business model for all restaurants.
