Lumberg Farms Organic Brown Rice Pasta w. Veggies and Sauce



Not the best photo, I know. I way overcooked this Lundberg Farms Brown Rice Pasta with Mushroom and Leek Sauce, so it turned into a bit of a gloopy mess, but it was still edible. I added a ton of spinach, mushrooms, peas, and baby heirloom tomatoes from Trader Joe's.

I tried a different variety of this pasta and sauce mix a while back and enjoyed it. That time I was able to cook it perfectly and the pasta held together. Ah, well, live and learn - I am pretty hit or miss cooking gluten-free pasta, and this was a slight miss but only due to me, not the product.

GF Fried Tofu [Vegan Mofo]



Day 8 of Vegan Month of Food!!!! I took yesterday off, but I feel ok since I've had multiple days of double-posts.

I am not gluten-free, but for some reason my mom will see gluten-free items and buy them for me, conflating gluten-free and veganism. Whatever, her heart is in the right place. So that's how I wound up with a box of gluten-free pancake/waffle mix. The mis sat in my pantry for weeks & months, until I finally figured out a decent experiment to use it for: fried tofu.

This turned out ok. It was a bit too sweet, and burned easily due to the sugar content.

Product Review: Ian's Mac and NO Cheese (GF)




So I'll start my renewed commitment to the food blog with a product review. Ian's Mac and NO Cheese which is also gluten free. It uses nutritional yeast for the cheesy base, so it is a lot different than Amy's Mac and Cheese with Daiya. I like it, though.

I use a microwave to make this stuff, and the directions are: poke holes in plastic, then micro for 2min on high, then remove overwrap, stir, micro one more min, and let stand. After the first 2 minutes, during the first stir, this stuff is REALLY questionable: it's runny, the pasta is not done, and does not resemble any mac and cheese I know. Do not give up! After the next minute in the micro, the sauce thickens and the pasta becomes more al dente.

This stuff alone is not bad, but I have been really enjoying it with mixed vegetables and sliced veggie dogs along with some ketchup and hot sauce. Definitely not for everyone, but worth a try.

Gluten Free French Toast Sticks from Ian's Natural Foods



These are frozen French toast sticks, from Ian's Natural Foods. They are Wheat/Gluten Free, and are vegan.

They weren't too bad. They are made with rice flour, which gave them an interesting texture. I don't personally think I'd buy them again because they are WAY overpriced, but they didn't taste too bad with a lot of syrup. It was neat to have frozen vegan French toast sticks. Shown here with maple syrup from Target.
