Sjaak's Chocolate Peanut Butter Bites &Chocolate Orange Bites [Vegan Mofo]



Vegan Month of Food is almost over.

I stopped by the co-op yesterday and picked up some delicious chocolates from Sjaak's. Little individually wrapped peanut butter chocolates and orange chocolates. The peanut butter chocolates are the ones pictured above, from Sjaak's site.

Awesome and delicious. I really want to get a giant bucket of both flavors, haha. I really enjoyed both, Mr. Coconut preferred the orange ones.

Afternoon Snack: Ants on a Log & Carrot Sticks



A snack blast from the past. "Ants on a Log" is a snack from many people's childhood, including mine. It involves filling celery sticks with peanut butter and covering with "ants" or raisins. To this snack I added chopped dates in addition to the classic raisins. I also had some carrot sticks. Just a simple snack, healthy and satisfying.

Berry Breakfast Waffles with Dark Chocolate Peanut Butter



Happy 100th Post to me!

Yum! This was a fantastic and filling berry breakfast. Frozen flaxseed waffles with a generous spread of both Smart Balance Light and Dark Chocolate Peanut Butter. Then they are topped with an even more generous mound of fresh blackberries and blueberries as well as maple syrup. I served this with a glass of strawberry soymilk.

Apples, Peanut Butter, and Medjool Date Wrap



Whole Wheat wrap spread with Parkers Farm Inc. Natural Peanut Butter, sliced Red Delicious apples, and 2 quartered and pitted medjool dates for texture and sweetness.

Yum yum yum. I've made many peanut butter and apple wraps, but the addition of the madjool dates really makes a difference. I've been adding dates to many things lately, most notably my morning breakfast oatmeal/multigrain hot cereal.

The Peanut Butter is quite good, cheaper than lots of other natural peanut butters, and it's local. So I love it.

I've also tried out and enjoyed both Hempmilk and Oatmilk as something different than just soymilk. My favorite is still chocolate almond milk. I still need to try Hazlenut milk.

--> I must note that I know all the non-dairy alternatives to dairy milk are technically not allowed to be called "milk" and are to be referred to as non-dairy beverages. Meh, I still call them "milk."

Creamy Tomato Soup and Peanut Butter Sandwich



This is my ultimate comfort food. I dip the PB sandwich in the tomato soup, because it's good. The only way I can eat this is with Campbell's condensed tomato soup made with (soy)milk. Other tomato soups just are not the same.

Peanut Butter with Apples and Agave Nectar



Again, this is really simple yet satisfying. Can you tell I have some apples to use up?

Take a piece of bread, spread some peanut butter on it (about 1T or more if you desire) and add some thinly sliced apples. Drizzle with agave nectar, which is very similar to honey.

On the plate are extra pieces of apple, also drizzled in agave.

Misc foods eaten over the past few days

No pictures, just a documenting my food type of post.

Other stuff I've eaten on 7/30:

Pesto Chik'n Sandwich:
two pieces of bread, toasted if desired
spread pesto on both pieces
add one Boca Chik'n patty
Enjoy
Tomato slices and fresh spinach or basil would be great, too

Hot Chocolate with PB Toast:
Simple, satisfying and comforting snack to make on a cold day. Or a hot day where you feel like you need a hug. Or during "that time of the month", when everything chocolate is satisfying.

One mug of soymilk, plain (8oz) (or favorite non-dairy milk. However, I'd stick to plain as the cocoa I use is plenty sweet.)
Hot Chocolate Mix, 2T (I like Ah!Laska Organic Cocoa, Non-Dairy Style)
Two pieces of Toast
2-4T (or more) of Nut Butter of your choosing


Heat milk in micro or on stovetop until warmed to your liking. Mix in cocoa. Experiment with sweetness, sometimes a little is enough, sometimes there can never be enough.

Toast your bread, slather on Nut Butter.
Fold each piece in half, and --wait for it-- dip it in the hot chocolate. Yes. Seriously. It's good. The chocolate and peanut butter or whatever nut butter you use, is awesome. Then again, I used to eat bread slathered in honey, folded in half, and dipped in plain milk. I also still eat peanut butter sandwiches and tomato soup. I'm crazy.

I also had pickles today.
